Here's a quick lunch or dinner idea. Takes about 20 minutes to prep.
Healthy Philly Cheese Steak First, set a pan on the stove on medium heat. Cut up a half a yellow onion and a half a green bell pepper and simmer them in a tablespoon of extra virgin olive oil for about 10 minutes until starting to brown. Take about an 8 oz lean sirloin, cut it into small strips and place them in the pan with the onions and peppers. Brown and stir them for another 5-8 minutes. While browning, season with whatever spices you like - I use fresh garlic, Montreal steak seasoning, a dash of Worcestershire sauce and some liquid smoke. A dash or two of each will do. Then turn the heat onto low for the last couple of minutes and put a couple of thin slices of low moisture skim mozzarella cheese on top to melt. Spread a small amount of lite mayonnaise on a couple of whole wheat sandwich thins, place the meat mixture in and enjoy! Yes, there's a salad too - you know how to do those! Put whatever greens and veggies you have together and dress with a lite balsamic vinaigrette. While you're cooking, if you're alone be sure to listen to your favorite tunes on your phone or mp3 player, or even some great health-oriented podcasts. If you're with others, share your day and have a great conversation! Food isn't something you just need to cook and eat for sustenance...make it fun, make it tasty, and make memories with the family.
