This is a GREAT recipe if you're craving chocolate chip cookies but want to keep the calories and fat on the lighter side. We literally had our kids fighting over who got to lick the beaters and have the last cookie.
Ingredients 2 1/4 cups whole wheat pastry flour 1 teaspoon baking soda 1/4 teaspoon salt 3/4 cup brown sugar 1/3 cup Truvia Baking Blend (or 1/2 cup granulated sugar) 1/4 cup salted butter (room temperature, but not melted) 1/4 cup unsweetened applesauce 1 egg 1 egg white 1 teaspoon vanilla extract 3/4 cup dark chocolate chunks Preparation Preheat the oven to 350 degrees and spray a cookie sheet with cooking spray. Mix the flour, baking soda and salt together in a bowl. In a separate bowl, blend the sugars, butter and applesauce. Blend in the egg, egg white and vanilla. Blend in the flour mixture. Fold in the chocolate chunks. Spoon the dough in tablespoon size balls onto the cookie sheet and cook for about 12 minutes until lightly golden brown. Enjoy with a cup of skim milk! Don't be tempted to eat too many, while they are healthier than normal chocolate chip cookies, each cookie still has about 125 calories, 22g carbs, 5g fat, 12g sugars and 2g protein. That's about 60% less calories and fat than you'd get in a normal cookie. Try them out and let me know what you think!
