Try this delicious and healthified version of Thai Noodles with Veggies and Peanut Sauce. Serves about 4.
Ingredients Noodles 1 package whole wheat linguine 1 package Green Giant Antioxidant Blend (Frozen Veggies) 1/4 cup chopped green onions 1/4 cup ground peanuts 2 chicken breasts, cut into chunks or strips 2 TBS olive oil 1 TSP seasoned salt 1 lime, cut into quarters Sauce 1/4 cup natural peanut butter (creamy variety) 2 Tbsp tamari soy sauce (use low-sodium variety if you prefer) 2 garlic cloves, minced 1/8 tsp grated ginger root (optional) 1/3 cup warm water Preparation Cook the linguine per the instructions on the package, drain and set aside. While cooking the noodles, heat up the Antioxidant Blend in the microwave for about 3 minutes. Pour the olive oil into a pan and cook the chicken chunks until slightly browned and cooked all the way through. While cooking, sprinkle with the seasoned salt. Mix in the antioxidant blend. For the sauce, mix all of the ingredients and cook over medium heat until it becomes slightly thick and bubbly. Pour about 3/4 of the peanut sauce over the noodles and mix well. Pour the noodles onto plates or a serving dish. Spoon the chicken and vegetable mix over the noodles. Sprinkle with the green onion. Place the peanuts in a pile on one side of the dish, and put the limes around the side. The extra sauce can be served on the side. Serve and enjoy!
