Try these healthy, delicious chicken pitas for lunch or dinner!
4 whole wheat pitas or flat bread
1 large chicken breast, diced
1/2 red onion, sliced
One half red and green bell pepper, sliced into 1" strips
1 TBS olive oil
2 TBS lite lime vinaigrette dressing
4 TBS jalapeno flavored Greek yogurt dip
1 tsp seasoned salt
Saute the bell peppers in the olive oil in a pan over medium heat. After about 5 minutes, add the onions and continue to saute another 5 minutes until all are beginning to brown. Put the veggies into a bowl and add the chicken breast chunks to the pan, searing them with a little seasoned salt. Once the chicken begins to brown, add the lime dressing to the pan and toss the chicken chunks. Let it cook another minute or two.
Spread a TBS of the jalapeno dip on half of a flat bread, add some chicken and veggies, fold and enjoy. Our family had this last night and it was a big hit!
